Raspberry Mousse
INGREDIENTS
• 2 cups frozen raspberries
• 1 cup raw cashews
• ½ cup full-fat coconut milk
• 2 tablespoons lemon juice
• 1 tablespoon raw honey or 5 drops liquid stevia
• water if needed to help things blend
PREPARATION
1. Boil 2 cups of water and pour over raw cashews to help them soften. Allow to sit for about 30 minutes, then drain. Add ingredients in the order listed to a blender or food processor and mix until blended. Try blending without the water first and add only if it needs more liquid to mix properly. 2. Chill for 30 minutes and enjoy.
