Nut "Porridge"
INGREDIENTS
• 2 tablespoons unsweetened coconut flakes
• 1 tablespoon raw pumpkin seeds
• 1 tablespoon raw flax seeds
• 2 teaspoons chia seeds
• 1 tablespoon walnuts
• ½ teaspoon cinnamon
• 7 drops liquid vanilla stevia or drizzle of raw honey (optional)
• 2–4 tablespoons coconut or nut milk
• ½ cup berries or fresh apricots
• 2–4 tablespoons coconut milk
PREPARATION
Grind the first six ingredients. Pour into a bowl and cover with 4–6 ounces hot water. Let sit for a few minutes to thicken. Add coconut or nut milk and fruit. Sweeten with liquid stevia or a drizzle of raw honey if desired. I like to add blueberries or bananas on top :)
NOTE: You can make a large batch of this cereal and store it in the freezer so that it is ready to go in the morning!
