Banana Pancakes

Ingredients

· 1 ¼ cup almond flour
· ¾ cup all purpose flour
· 1 tsp. baking powder
· 4 eggs
· 1 cup fluid (milk, water, or half and half cream and water)
· 1 over ripe mashed banana
· *adjust fluid for ripeness—more ripe = less fluid)

Preparations

Add eggs, fluid and bananas to mixer. Mix well. Add dry ingredients and mix until combined. Scoop into a preheated pan on the stove and cook on one side until you can flip it. Cook other side until they don’t stick to the pan. Use med/low heat as these burn easily.

Eat alone or with whipped cream (dairy or coconut). Add fruit if desired.
